Amish Baked Oatmeal




  1. Melt butter and set aside.
  2. Spray a 8x8 inch baking dish or 1.5-quart casserole dish with non-stick spray. Add eggs to dish and beat well. Add brown sugar, baking powder, vanilla, nutmeg, cinnamon, cloves and salt to dish. Mix well until no lumps remain.
  3. Whisk melted butter and milk into mixture, then add oats. Stir well, seal dish with cling wrap, and refrigerate overnight.
  4. Bake uncovered at 350°F (use an oven thermometer to verify oven setting, if available) for 35-45 minutes or until set in the middle. Serve hot with warm milk poured over the oatmeal.


  1. Recipe doubles very nicely without needing to change the baking time; if you do this, use a 9x13 inch baking dish or 3-quart casserole dish. When doubled this recipe easily feeds a very large group (10-12 hungry eaters) or ensures a week's worth of breakfasts.
